Cool, refreshing gazpacho is a tasty treat on these hot summer days

Gazpacho is a soup made of raw vegetables and is served cold.

Originating in southern Spain, gazpacho is widely eaten throughout Spain and neighboring Portugal, especially during the hot summer days, as it is cold and refreshing.

It is a great way to use vegetables from your garden or from the local farmers market. It is like a liquid salad!

Summer gazpacho

Serves: 6

  • 2 medium red onions, peeled and cut into large chunks
  • 1 cucumber, peeled and cut into large pieces
  • 1⁄2 cup cilantro leaves
  • 1 red bell pepper, seeds and white membrane removed, cut into large strips
  • 12 tomatoes, cut into large wedges
  • 4 slices rustic white or sourdough bread, crusts removed, torn into pieces
  • 1⁄2 cup water
  • 1⁄3 cup extra virgin olive oil
  • 2 tablespoon sherry vinegar
  • 1 tablespoon mayonnaise

Put the first seven ingredients in a food processor or blender. Process everything together. Transfer to a large bowl.

Whisk in the last three ingredients until creamy and smooth. Season with kosher salt and fresh ground pepper. Cover and refrigerate at least two hours or, better, overnight.

Serve the gazpacho in soup bowls with an additional drizzle of extra virgin olive oil and homemade croutons.


  • 4 slices rustic white or sourdough bread, crusts removed
  • 1 1⁄2 cup olive oil
  • garlic powder

Cut the bread into 1-inch squares. Heat the olive oil in a frying pan over medium heat. Add the bread in one layer. There should be enough olive to saturate bread. If not, add more oil.

Cook until underside starts to crisp. Turn over, sprinkle with garlic powder, crisp other side. Remove to paper towel to drain.
