Don’t fear taco trucks just because you’re afraid you won’t understand the menu. Here’s a rundown of simple things to keep you from looking like the rookie.

Torta: A Mexican sandwich made on a roll.

Tostada: All the fixings of a burrito, but layered on a hard corn shell.

Jarritos: A Mexican soda served in a tall glass bottle. Popular fruit flavors are tamarindo, Jamaica and limon (lemon lime).

Agua de Horchata: Cold, sweetened rice milk.

Meats (carne) and seafood

Asada: Roasted beef.

Al pastor: Marinated pork.

Pollo: Chicken.

Jamon: Ham.

Lengua: Tongue (usually beef).

Cabeza: Head (usually beef).

Cesos: Beef brain.

Chicharron: Fried pork rinds.

Tripas: Small intestines.

Chorizo: Mexican sausage.

Camaron: Shrimp.

Pescado: Fish.
