Please do not fear winter squash — I promise, they won't hurt you! I assure you, they are easy to cook and super delicious.

What is winter squash? Well, first let's establish that it is not squash that grows in the winter. Rather, it is a type of gourd that is grown in the summer and harvested in late summer and fall. It's hard and the thick rind allows it to be stored for long periods of time, often throughout winter until spring.
