Young restaurateur Laura Valle brings crepes, paninis to Lodi with Panini Factory

Laura Valle swirls batter into a perfect circle on the round, heated grill. The batter starts to bubble from the heat, and the restaurateur uses a long spatula — what she calls her “crepe beater” — to flip the thin, golden-brown pancake before filling it with cheese and just-chopped fresh spinach.

Valle is making a crepe, that oh-so-French dish that can be savory or sweet. She is one of the only restaurants in Lodi to specialize in the dish.
