It’s official: I’ve been served the largest burrito that I believe exists in Lodi. This thing is so huge that it had to be made on a specially curved burrito-folding plate before it went on to cover the actual serving plate.
Francisco Ornelas, who is a co-owner of Happy Burro on Kettleman Lane, layered a giant flour tortilla with rice, beans, lettuce and chili Colorado that he had cooking in a separate skillet. After he layered the meat, he poured the rich-colored sauce over the meat and over the other fillings. Like the craft he’s learned, he folded the tortilla as tight as he could around the fillings that nearly bulged out of the tortilla. He topped it off with a smothering of crema fresca and shredded cheddar cheese.
