A great example of a simple and healthy Slow Food dish:

Lodi Heirloom Pebble Bean Sauté with Bacon

Pick over beans and rinse thoroughly in cold water. Place cleaned beans in a bowl of fresh cold water, cover and soak for 3 to 8 hours or overnight at room temperature; drain and rinse well. Or place beans in a saucepan with water of cover, bring to a boil, remove from the heat, and soak for 1 1/2 hours, drain and rinse well. Cook beans by covering with 2" of water, simmering 1 to 2 hours or until tender depending on size of the bean.

Once the beans are tender, you can do just about anything with them!  Add to soups, salads and casseroles.  A very simple recipe that I enjoy for beans is to simply fry a little chopped bacon in a pan.  When the bacon is crisp remove.  Add in some onion and garlic and sauté until soft.  Add beans and cook for a few minutes longer until flavors combine and season with salt, pepper and a pinch of cayenne.  Finish beans with crisp bacon and chopped Italian parsley.  Enjoy on it’s own with cornbread or as a side dish.

Beans are the perfect food - they are filling, cheap and full of fiber, protein and vitamins!
