What is Slow Food?
“Slow Food is a global, grassroots organization with supporters
in 150 countries around the world who are linking the pleasure of
good food with a commitment to their community and the
environment.
A non-profit member-supported association, Slow Food was founded
in 1989 to counter the rise of fast food and fast life, the
disappearance of local food traditions and people’s dwindling
interest in the food they eat, where it comes from, how it tastes
and how our food choices affect the rest of the world.”

A great example of a simple and healthy Slow Food dish:
Lodi Heirloom Pebble Bean Sauté with Bacon
Pick over beans and rinse thoroughly in cold water. Place
cleaned beans in a bowl of fresh cold water, cover and soak for 3
to 8 hours or overnight at room temperature; drain and rinse well.
Or place beans in a saucepan with water of cover, bring to a boil,
remove from the heat, and soak for 1 1/2 hours, drain and rinse
well. Cook beans by covering with 2" of water, simmering 1 to 2
hours or until tender depending on size of the bean.
Once the beans are tender, you can do just about anything with
them! Add to soups, salads and casseroles. A very simple recipe
that I enjoy for beans is to simply fry a little chopped bacon in a
pan. When the bacon is crisp remove. Add in some onion and garlic
and sauté until soft. Add beans and cook for a few minutes longer
until flavors combine and season with salt, pepper and a pinch of
cayenne. Finish beans with crisp bacon and chopped Italian
parsley. Enjoy on it’s own with cornbread or as a side dish.
Beans are the perfect food - they are filling, cheap and full of
fiber, protein and vitamins!
