Fast Food: Sardine & Avocado Toasts

This is what my husband and I eat when we are in a pinch for time and we love it. This is based on an Alton Brown recipe of much greater complexity that can be found at foodnetwork.com. I have tried it both ways and I find that all of his steps don't make it really taste any better than our recipe, just different. In fact, I actually like ours a little better. Play with the recipe and make it your own. No exact amounts needed, just do it to taste.

Fine Brisling Sardines, packed in oil

Sourdough Bread

Ripe Avocado

Lemon

Kosher or Sea Salt

Fresh Chopped Chives and/or Italian parsley, if on hand

Toast sourdough bread until golden and allow to sit for a few minutes before topping, so it remains crunchy. Chop avocado sloppily and combine with lemon juice and sea salt. Top toasty cool bread with avocado mixture and as many sardines as you can pack on top. Top with chopped herbs if desired. Eat. This dish is totally satisfying and will make you feel amazing. Enjoy!
