There is good reason to eat a variety of vegetables of different colors. Not only does preparing meals with a variety of colors please the eye and the stomach, you also get a variety of nutrients as well. Different color vegetables offer different vitamins and minerals. So when hitting the store or visiting your favorite local farmer next time, pick out a mix of colorful produce and give some new shades a try!
