These days, between writing and running my shop, I have little time to cook big fancy dinners. However, I still make time to put something together that is tasty and nutritious! Last night I served this easy dip on grilled baguette (used my cast iron grill pan) along with some crunchy, toasty garbanzo beans.
Avocado & Goat Cheese Dip
1 Small package of chevre goat cheese w/ herbs
The juice of 1 lemon
Salt to taste
Gently combine ingredients and enjoy. Wonderful also served topped with slice tomatoes and red onion or served with tortilla chips.
