Oh, la, la French onion soup is tasty but easier on the waistline

French Onion Soup is one of my favorites, even though it is one of the most expensive and highest calorie soups on the menu. Generally, French onion soup recipes consist of sautéed onions in a beef broth covered with a thick piece of toast and shredded cheese melted on top. However, my homemade Ooh La La French Onion Soup is just as tasty and is under 200 calories a serving.

One day while surfing the net, I found a recipe for French onion soup at www.healthination.com and decided to give it a try. It was quick to make, easy on the waistline, nutritious and flavorful. I adapted the original recipe creating oh, la, la French onion soup. My version calls for a healthy grain bread and thin sliced reduced Swiss cheese added to a virtually non-calorie vegetable broth. Try it! You’ll like it!

8 cups water

2 medium yellow onions (save onion skins)

2 medium white turnips (quartered)

1 Tablespoon olive oil

1/4 teaspoon thyme

1/3 (scant) cup light soy sauce

1/4 (scant) cup rice vinegar (I use garlic flavored)

4 slices whole grain wheat bread

4 slices Swiss cheese (thin sliced)

Wash unpeeled onions and turnips. Place 8 cups water in large sauce pan. Remove onion skins and place in sauce pan, along with unpeeled turnips cut in fourths. Bring to a boil and simmer 30 minutes. Strain broth and discard onion peel and turnips. Add soy sauce and rice vinegar to broth. While broth is cooking, thinly slice onions; sprinkle with thyme and sauté in oil in a frying pan until onions are golden brown. To serve: reheat broth, add onions, ladle into soup bowl, and place bread with a slice of cheese on top. Enjoy!
