A mock tuna salad sandwich

A tuna salad sandwich is one of the things I missed when going vegan. Without the benefit of a can of tuna, and a slap of mayonnaise, I thought I would never delight in my favorite tuna sandwich again. However, where there is a will, there is a way.

Try my Mock Tuna adapted from www.peta2.com and enjoy the taste of a tuna salad sandwich.

1 can garbanzo beans, rinsed and drained

2 tablespoons Vegganise (vegan mayo)

2 tablespoons spicy, jalapeno, brown or horseradish mustard

2 tablespoons diced onion

Garlic powder to taste

Salt and pepper, to taste

2 slices whole wheat bread

Mash garbanzo beans with fork in a medium size bowl. Add vegan mayo, mustard, onions, garlic powder and pepper. Apply mixture on whole wheat bread spread with mustard. Garnish with sliced tomato and lettuce.
