LUSD changes menus, will toss out 600 cases of beef after recall

Students in Lodi Unified School District have been sitting down to meals of meatless spaghetti and "fish treasures" instead of hearty hamburgers or sloppy joes.
The menu change is the result of the major beef recall that forced Lodi Unified to stop using all beef products.
Galt Unified School District has been is still serving beef after quickly changing its meat vendor.
Warren Sun, Lodi Unified's director of food services, said cafeterias in the district stopped using beef Jan. 31 and started storing it in cafeteria freezers.
"As soon as the hold was placed on (the beef) we placed a hold on it in the schools," said Cindy Oliver the operations supervisor for Lodi Unified.
On Monday, 600 cases of hamburger patties and beef crumble — now stored at the district's warehouse — will be taken to the Harney Lane landfill and destroyed.
Instead of meat, schools have been serving extra cheese, chicken, fish and other high protein food to continue to meet the 2 ounce a day protein requirement for meals.
The district does have 36,000 pounds of beef that it can use, but Sun said it will remain in storage.
He said the March lunch menu didn't include many beef items so it was easy to change it and eliminate beef altogether. The April menu also doesn't include beef, although Sun said he still made sure there were different meals each day.
"We want to give kids some variety," Sun said.
While the district can still use its stored beef, Sun said the May menu has not been set.
So far, students don't seem to mind the change.
"As long as it's something they like, they don't care," Kathy Calvin, cook manager at Beckman Elementary said.
However, Calvin did say that though the transition from meat meals to non-meat was smooth, she is still concerned.
"It's not really a problem," Calvin said, "it just makes me leery."
Sherril Thornburg, supervisor of Food Services for Galt Unified, hasn't had her staff change meals, she just ordered beef from another distributor after hearing of the recall.
"(Meat) was on the menu so we kept it," Thornburg said.
Thornburg said the beef Galt Unified is using comes from Danielson Company and has been used in school lunches since the recall began.
Galt Unified only had to destroy 33 cases of beef but since they had less than 50 cases they were able to just dump the beef into garbage cans with two eyewitnesses to sign confirmation papers for the United States Department of Agriculture.

Unless the USDA found a problem with the meat being held by LUSD, I do not understand why they are about to destroy 600 cases. I have heard of nothing since the 7th of February indicating that there is a problem here.
However, before they haul this stuff to the dump, please give me a call. I'll happily take a couple cases off your hands. "

I don't believe any animal should be mistreated or tortured. Those that committed those crimes should be punished. The cows, though, were going to be killed and unless there is proof that they were diseased, this campaign to destroy the edible meat produced from them should be re-evaluated. At least test the stuff first. "

It's just like the LN-S to print the above statement without asking what Calvin is 'leery' or 'concerned' about. While this instance is somewhat minor, I have consistently noticed this about the reporting style within the LN-S. Either no one is proof-reading what is finally printed, or the editors simply don't care that their articles often make little or no sense. "
