Omelet House offers many options in waffles

The Omelet House in Lodi serves nine kinds of waffles — plain, strawberry and almond combo, blueberry combo, banana walnut combo, banana, strawberry and chocolate combo, pecan combo, cinnamon walnut combo, and a buckwheat waffle. Owner Mike Ramada said the menu was recently changed and used to include a bacon waffle, blackberry waffle and a chocolate chip waffle. Ramada said most people ask for their waffle to be crispy.

"I think a waffle is supposed to be crisp and not doughy," he said.

He added that if a waffle is doughy, it means either the batter is too old or the temperature is too cool. The timer needs to be set at about five minutes or the waffle ends up too underor over-cooked. The Omelet House gets their batter from a company by the name of Page, which is based out of Los Angeles. He said when making fresh batter, it is good to use pancake mix and add egg yokes and real butter. He suggests not using margarine because the real butter makes the waffles more fluffy and crispy.

Lodi Cooks offers a variety of fun waffle irons to choose from:
• Square traditional
• Disney characters
• Winnie the Pooh
• Hearts
• Farmyard animals
• Waffle boats, which can be filled with fruits and creams

The Omelet House's waffles are served with whip cream unless specified by the customer, and the restaurant offers sugar-free syrup as well as regular.

Ramada feels the strawberry chocolate chip is the best waffle, although he said many customers ask for the banana because it is fresh and they don't feel as bad eating it because of the fruit.

For take-out waffles, Ramada said the best way to reheat is to set the oven for 350 degrees and warm them for a couple of minutes on each side. For microwave heating, he suggests heating for about 12 to 15 seconds on each side.
